Smoked gurnards
Product information
Gurnards are a sweet tasting red fish which smoke beautifully.
We fillet them (will still contain a few bones) then brine and dry them before hanging them in up in our smoke house. They then spend the night being slowly smoked over oak chippings.
If you’ve never tried them before – they’re a must!
